Pannu Kakku Recipe (Finnish Oven Pancake)
I’d like to share with you a family recipe - a traditional Finnish oven pancake, better known as Pannu Kakku. It’s a thick, oven-baked pancake with crispy edges and custard like interior. And also incredibly easy to make coming together in just minutes! Smother it in maple syrup and/or, my personal favorite, top with fresh berries and cinnamon, but really the possibilities are endless once you discover this delicious recipe, a true delight for the taste buds!

Ingredients
1 teaspoon salt
2 cups milk
Cinnamon or nutmeg to taste
Maple Syrup (I recommend Black Bark Maple Syrup - Menahga, MN)
Fresh berries (optional)
1/4 cup butter
5 eggs, beaten
3/4 cup sugar
1 cup flour
1 teaspoon vanilla
Pannu Kakku Directions
Step 1
Preheat oven to 375 degrees F (190 degrees C). Melt the butter in a 9x13 inch pan, tilting to coat all sides.
Step 2
In a medium bowl mix eggs, sugar, flour, salt, milk and vanilla.
Step 3
Pour into pan and sprinkle with cinnamon or nutmeg.
Step 4
Bake for 35 minutes.
Step 5
Remove and let set. Serve hot.
Step 6
Top with maple syrup and fresh berries.
For this styled shoot I chose to cut the pannu kakku into circles, creating a more photogenic and appetizing look.
